Josh Pond’s Cave-Aged Esker Blue
Esker Blue, made from organic cow milk, is smooth, spicy, and distinct in flavor. Encompassed in a natural, earthy rind, this cheese is aged 3-4 months below ground in our cheese cave. Deep blue veins are scattered throughout the wheel, and each bite leaves with a fresh creamy finish. Our seasonal cheeses are all handmade in small batches in the style of farmstead artisan cheesemaking.
