Black Trumpet Mushrooms, also known as Horn of Plenty (Craterellus cornucopioides), are available from late summer to late autumn. These mushrooms have a delightful sweet and earthy richness, especially when they are dried. They add excellent flavor to soups, stews, casseroles, and go particularly well with white fish, creating a great contrast.

To use these mushrooms, reconstitute 1 ounce of dried mushrooms in 4 cups of cold water for 10 minutes or soak them overnight in the refrigerator. Afterward, strain the liquid through a coffee filter or paper towel and use it in your recipes. For best results, store the mushrooms in the freezer, and once the package is opened, it is recommended to repackage the mushrooms into freezer bags. This ensures their freshness and flavor are preserved.
