Our Japanese Knotweed (Reynoutria japonica) is hand harvested in the pristine mountains north of Asheville, NC. Each shoot is carefully peeled before being placed in a simple salt & water brine then allowed to lactoferment for several days. This brings out amazing flavors, preserves crunchiness and removes the mucilaginous quality characteristic of raw knotweed. 

These pickles will last indefinitely in or out of the fridge in this salt water brine. Your purchase is also helping support our management efforts of this species which has a significant effect on streams and local biodiversity.
