We have collected, hulled, and cured wild black walnuts. The trees that produced them is on our farm here in NJ. The nuts need to be cracked with a heavy-duty cracker for hard nuts, or possibly a hammer. A basic nutcracker will not work. The nuts have the wonderful wild black walnut flavor and are much more potent than Persian walnuts that are purchased in stores. We've cracked and eaten many and they have worked well in salads, pesto, and roasted with salt. You can use half as many as regular, Persian walnuts in recipes. We think of them as the gorgonzola of nuts and we hope you can enjoy them as much as we do.
