Please note that the size of your wasabi roots may vary. Some roots may weigh approximately an ounce, while others can be 2 ounces or larger, with a few being slightly smaller. Occasionally, we may need to cut the root into pieces because our supplier sends us exceptionally large roots.

Beyond its traditional association with sushi or sashimi, wasabi offers an exceptional flavor profile that complements a diverse range of dishes. Try it with steak, oysters, white sauces like aioli or crème fraîche, mashed potatoes, salad dressings, and cold noodle dishes. It even adds a unique kick to Bloody Marys!

It's essential to know that most commonly served "wasabi" might just be horseradish mixed with green food dye. You may have yet to experience the true taste of fresh wasabi!

Fresh wasabi, much like salt and butter, serves as a flavor enhancer, contributing a vegetable flavor reminiscent of asparagus or artichoke hearts while providing a delightful heat that enhances other flavors.

At our farm, we harvest genuine, real wasabi rhizomes, leaves, and stems, available year-round, straight from the farm. The pristine coastal mountain stream water in which it grows gives our wasabi a clean taste, distinct from some imported varieties cultivated in soil. We offer the vegetable itself, not processed powder or paste, so its heat and flavor remain uncompromised.

For optimal freshness, your wasabi will last up to two weeks in the refrigerator. However, please be aware that there might be a waiting period of up to a week after your order before we can ship the wasabi, as we harvest it only once a week. If you need it urgently, feel free to call or email us to check for immediate availability.

To maintain the freshness of your wasabi, wrap it in a moist paper towel and change it every other day. It's crucial to grate the wasabi immediately before use, as its flavor diminishes after approximately half an hour once grated. However, this characteristic only affects the grated wasabi, not the root itself.

In case you notice any part of the root turning brown or black, simply trim it off and discard it; it will not affect the rest of the root.

It's important to understand that huckleberries primarily come from Oregon, Idaho, and Montana. Nonetheless, our customers, both retail and wholesale, have expressed their love for our berries consistently.

Although there might be a few not fully ripe berries due to freezing them at their peak, the overall quality and taste are highly appreciated by our satisfied customers.

Regarding the huckleberries' little stems, rest assured that these stems are not noticeable in taste. Removing them would cause the berries to turn mushy, so they are left intact, having no negative impact on their use in various culinary applications.

Keta salmon ikura has larger, well-shaped and brightly colored eggs, rich in omega-3s. It contains anti-oxidants, omega-3s and vitamins that are beneficial for your health. This consists of vitamins B12, C, E, and D, along with folate, thiamine, and it's high in protein - 9g in just 1oz!

Keta ikura salmon roe is the most popular wild Alaskan salmon roe. People also recognize it as chum salmon ikura, keta salmon roe, or keta salmon red caviar. Japanese sushi restaurants commonly use this type of ikura caviar, but home chefs also include it on their plates.

Ikura is a lightly salted salmon roe , separated from the roe skein and flash frozen for maximum freshness. The history of ikura dates back centuries in Japanese culinary culture.

Originally, ikura was not specifically salmon roe but referred to the roe of various fish, including salmon. People typically cured it using techniques like marinating in soy sauce or brining with salt to preserve it.

Salmon eggs have become more popular over the years. This is especially true in the 20th century, because of improvements in fishing and processing methods. These advancements have contributed to the increased popularity of the salmon roe. People were often eating salmon eggs, especially in salmon roe sushi, and the name ikura became a synonym to salmon roe.

Today, ikura remains a cherished ingredient in Japanese cuisine and beyond, appreciated for its unique flavor and texture. Its journey from a traditional preservation method to a beloved delicacy reflects the rich culinary heritage of Japan.

Salmon caviar is also popular in Russia, eastern Europe and in the Caspian Sea region. The name ikura actually comes from the Slavic word "ikra", which means a fish egg or fish roe. In Russia you can often find ikura served with scrambled eggs, sour cream, or with special pancakes called "bliny".

We are a family operated ranch located outside of Kellerton, Iowa. Beau’s family raised Maine’s since the 1970s, and he and Shanen started their operation in 1998 with the purchase of ten cows. What started then has grown into a family affair, and Adelyda, Jolene and Wyatt have grown up in the beef industry.

We have around 150 mother cows.  We raise Maine-Anjou cattle.  Maine's were originally developed in the Maine and Anjou river valleys of France.  They are prized for being great mothers and their superior beef.

We raise Grass Fed Beef. All of our calves are born on our farm and raised with the highest quality care. Our 100% Grass Fed Beef is raised on pasture their entire lives. They are born in the fall, so they spend their first winter on the cow and are harvested before their second winter. 

We focus on beef quality and the health benefits that GrassFed Beef provides.  We keep all of the families that we feed in the front of our mind each day.

Tuber melanosporum is known around the world as the culinary diamond of the kitchen. Also referred to as the black winter truffle, or mostly commonly as the Perigord truffle, named after one of the regions in France where it is commonly collected.&nbsp; Perigord truffles are native to Europe but they are also successfully cultivated in other parts of the globe, such as Australia, and now here successfully in the US! These truffles are grown the lush soils of Northern Carolina or one of the farms we partner with closely in Kentucky! We always support and promote local products, and the access to these amazing truffles quality is nothing like you’ve ever had before! When you purchase these truffles, you are supporting small family farms in the region. Did you know that some of the yummy volatile aromas of these truffles you can only get within 24-48 hrs of the ground? When possible these are shipped out to you the day they are harvested!Think earthy with aromas that bring to mind damp forests, with hints of molasses, chocolate and tobacco- and from this particular farm, aromatics of malt and earth!Perigord&nbsp; truffles have a dark outer skin with large, diamond-shaped pyramids, and a marbled chocolate or deep slate grey-colored interior when ripe.They are served raw on warm dishes, but also can be heated (slightly) to release a more robust flavor and aroma, and are ideal for infusions.We recommend this product is consumed as soon as possible, within 1 week.
